Hearty Egg Casserole

HEARTY EGG CASSEROLE

Ingredients

  • 12 slices good, homestyle bread, crusts removed
  • 3 tablespoons butter
  • ½ cup butter
  • ½ lb. fresh mushrooms
  • 2 cups yellow onions, thinly sliced
  • salt & pepper to taste
  • 1 ½ lbs. Papa George's Reduced Fat Italian sausage
  • ¾ lbs Cheddar cheese, grated
  • 5 eggs
  • 2 ½ cups milk (2%, 1%, or skim)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped basil

Cooking instructions

Spread bread with 3 tablespoons butter and set aside. Melt ½ cup butter in a large, heavy skillet and brown mushrooms and onions over medium heat until tender. Season to taste with salt and pepper and set aside. Remove from casing and cook sausage, breaking up with a fork in small pieces.


In a buttered, shallow 11" x17" pan, layer half the bread, mushroom mixture, sausage and cheese. Repeat the layers. In medium size missing bowl, beat together the eggs, milk, mustard, salt and pepper to taste. Pour over baking dish and refrigerate overnight. When ready to bake, sprinkle parsley and basil over top, if desired, and bake uncovered for one-hour in a preheated 350-degree oven.

Makes 8 servings.

SAUSAGE AND EGGS

Ingredients

  • 1 12-oz Package of Reduced Fat Pork Sausage Links (Original)
  • 8 Eggs
  • Hashbrown (as needed)
  • Fruits of choice
  • Toasted Whole Wheat Bread

Makes 4 servings.

SAUSAGE AND PANCAKES

Ingredients

  • 1 12-oz Package of Reduced Fat
  • Pork Sausage Links (Maple)
  • Buckwheat Pancakes, store bought or homemade
  • Pure maple syrup
  • Butter or substitute
  • Fruits of choice

Makes 4 servings.

BISCUITS AND GRAVY

Ingredients

  • 1 12-oz Package of Papa George's Reduced Fat Pork Sausage Roll (Hot)
  • 1 12-oz Package of Papa George's Reduced Fat Pork Sausage Roll (Sage)
  • 4 tablespoons flour
  • ½ gallon milk (Whole or 2% Fat)
  • ¼ cup butter (optional)
  • Salt
  • Pepper
  • Biscuits, store bought or homemade

Cooking Instructions

In a large pot, add sausage, crumble and cook until lightly browned. Melt butter (if used) then add flour to sausage. Cook over medium-high heat until sausage is well coated with the flour. Add milk and stir until desired thickness and add salt and pepper, to taste. Serve with biscuits.

Makes 10 servings.
